Cool Air Recipe time!


As soon as there was a hint of cool air, I was in the mood for a slow cooker meal. However, my time didn't allow me to wait 8 hours considering it was 5:00 pm on Thursday night! I tried this recipe and made some changes and it was DELICIOUS!! The only thing you might have to run out for is the chicken unless you want to substitute cooked chicken breasts. Chicken Tortilla Soup
(cook time: under an hour)
serves 8-10 (or great for leftovers)

2 Tb spoons of butter
1 clove of garlic (or 1 teaspoon of diced garlic out of the jar)
1 Rotisserie Chicken (cooked)
1 32 oz. carton of chicken stock
1 12 oz can of diced tomatoes
1 can of Rotel
1 can of Mexicorn
1 8oz block of cream cheese (softened)
1 Tb spoon (or more) of cumin
1 Tb spoon of red chili powder
1 tsp cilantro
garlic powder and pepper to taste

(shredded cheese and tortilla chips to serve, we like the tostitos scoops with the "hint of jalapeno")

In a stock pot, on med/high heat melt butter and saute diced garlic for about 3 minutes, then pour in chicken stock and all vegetables. In the mean time take a fork and shred the meat off the breast of the rotisserie chicken. Once the liquid comes to a boil pour chicken, cream cheese, and spices in. Let the mixture simmer until cream cheese is blended (15 minutes) and it is ready! I like to turn mine on low and let it simmer for an hour, the flavors really come out the longer it sits.

This is something new Hudson has been yelling when he can't get what he wants, I don't know where he picked this up and I really don't think he knows what it means but I can't stand it! Speaking of Fair...we went to the South MS Fair this week! Mawmaw and Pawpaw met us there. The boys had so much fun and actually remembered it from last year here are some of our favorite memories...

NOLA Getaway


"Ok, boys what do you want your pumpkin to look like?", I asked. "Charlie!" Hudson said. Hmmm...... I said, "How about this!!??"

"Yeah!!!" they were excited about the classic Jack-O-Lantern face, thank goodness.


We had a big weekend in New Orleans at my dear friend Kristin's wedding, she was a Phi Mu with me and a best friend in college. I read in her wedding, so I had to be down there Thursday night for the rehearsal and we got back today. Everything was fabulous and quite an experience. They hosted a great weekend!

89 going on 30!

The weather we have been having has been very inviting to go outside to let the boys play while we relax and watch some football.

Every 3 year old (and up) needs some skates, they LOVE them.


This baby had Strep Throat this weekend and stayed home from school Friday.


This little guy couldn't stand not being the sick patient with all of the attention....you will find proof of this on our coffee table (permanent black marker), bathroom cabinet (hi-lighter), and many dangerous acts seen only by my eyes.

He was brave enough to go to school by himself Friday for the Trike-A-Thon!! What a big boy!

Here we are celebrating Granny Shaw's 89th birthday!! I told her we both will be turning a major two-digit number next year but at least we can do it together!

Catching up!

I have tried and tried to blog this week. For some reason it has been giving me a hard time about posting pictures. I think I finally got 4 to upload :( We had a special week last week, our boys turned three! Here are a few pictures from the week!

Our two three's!

Our sweet babies are turning three tomorrow! This always seemed so far away and it has come in the blink of an eye. The laughter, tears and surprise didn't stop the day we found out that there were two! The entire pregnancy was exciting and eventful and on Tuesday October 2, 2007, at 35 weeks, I went to the hospital at 4am because I thought I was having an allergic reaction. I was expecting some meds and sent back home to rest. Joel went to work and my mom went with me. The nurse said, "these babies have to come out in the next hour!" and after a whirlwind, finding Joel, taking the quickest shower ever, and the locating the doctor... we had two baby boys. Harrison was 6.5 lbs and Hudson was 4.12 lbs, they were perfect, they didn't need the NICU and came right into the room with us! We were told my whole pregnancy that they were identical and we even had to get their hospital hats monogrammed to tell them apart (besides their size!). After 3 days they told us their blood types were different which meant they were fraternal! Now, that is more than obvious!


Harrison
You are our sweet and genuine boy. You have the memory of an elephant and can remember things from more than a year ago. Your laugh is infectious, it comes from the bottom of your belly and anyone who is around to hear can't contain the urge to join! Your eyes hold all of your emotions, they are so true and full of wonder. You are sensitive and emotional at times, which only shows the big heart you have and you worry about things that we "forget" to be concerned about. Your need for perfection tells us that you will be determined in your goals and dreams for yourself. We are so proud of the little boy you have turned into. I love when you put your head on my leg and look up and say, "I love you Mommy", nothing makes me feel so right! You love your Huddy and he can tease you and push you to the edge but you always like to have him by your side. The things you say make us roll and I hope your sense of curiosity and awareness continues to blossom! We love you little guy!


Hudson
You are a permanent smile! You stay so busy all the time, working, playing, running and discovering. You are a playful little boy, you like to play tricks and do funny things to make people laugh. You always follow my directions very well and get frustrated if you can't do something on your own. This shows us your independence and determination to finish. You will always take time out to sit in my lap and say, " I love you momma" or "I'm happy! You happy momma?" and when we get in the car in the mornings you are my weather man and you will either report "It's a sun shiny day!" or "It's a cloudy day!". You count the horses every time we leave or return and report on how many and what they were doing, you have such a love for animals. You also love to say your prayers at dinner and at bedtime, we only hope your love for the Lord will continue to grow. You are my boy that I can reason with and is always backing me up and looking out for me. Thank you Superhuddy, I need all I can get! I especially love when something is broken or needs batteries and you say, "Daddy can fix it, Daddy can fix anything!". We love you snuggle bug and can't wait to see what wonderful young men you and your brother grow into.
